Ceviche originated from Peru and they use citrus such as lime or lemon instead of vinegar.

I've heard Filipinos use the term Ceviche before to describe some of their raw seafood that they eat with vinegar and calamansi.

In Chavacano, what's the vocabulary word for raw seafood dish?  In Mexican Spanish they call them Platillo de pescado crudo.  Peruvian founders probably did use the term Ceviche since they ate raw seafood in Philippines.

Tagalog borrowed the word Guano, a Spanish word that was originally called Huanu in Quechua. Guano means dung from seabirds and bats used as fertilizers.
