I see a few Mexican and Filipino fusion food

Filipinos didn't acquire the recognizable commercialize Mexican food such as Burritos and Tacos.  We have a few dishes that actually uses wraps such as Egg Rolls, Empanadas, Turon (fried banana egg rolls), Spring Rolls.  Filipinos prefer to eat with rice instead of wrapping around the meat and vegetables with corn/flour tortilla.

 

The dishes that were influenced by Spain and Mexico were stew dishes such Afritida, Chicken Adobo, Kaldereta, Arroz Caldo, Menudo, etc. There are several non-stew dishes that were also introduced to Philippines.  In some ways there was an old fusion between Mexican and Filipino food.

You moved a lot. 😎

SoCal has a large Mexican population here.  

Texas has lots of Taquerias and so does SoCal. Mexican food and restaurants are almost in every block in some cities here in SoCal. It's probably not the case with Virginia? You probably have to make homemade Mexican food.

Makes sense.

I guess your area has a sizeable Hispanic population - Cubans, Puerto Ricans and Mexicans.

I am assuming that you'll be receiving the vaccines also since you're considered a frontline essential worker?
